Before I forget tonight we had an amazing dinner which included blanching kale and spigarello broccoli. It was really simple and very delicious! We are big green eater so two bunches of kale and one bunch of spigarello fed four people. You can adjust according to pan tummy space. Greens also cook down a lot so its something like kale shrinks 25% and spigarello 50%.

Spigarello Broccoli Bunch
5 Cloves Garlic, sliced
Three Leeks, sliced
Fill a large bowl with ice water set aside. Bring large pot of heavily salted water to boil. Add Kales;after three minutes add spigarello.boil for two more minutes- strain out and submerge in ice water. In a skillet pan heat olive oil and garlic. As garlic starts to brown add leeks and boiled greens. Saute until fully wilted. Enjoy!
